We are looking for a chef/cook to deliver a highly effective and efficient café/bistro and events catering service for The Customs House.
Key Objectives of The Post
- To provide high quality home cooked food using fresh ingredients for our café bistro during morning/lunchtimes and to cater for a range of events
- To ensure quality control measures and hygiene systems are maintained within the kitchen at all times
- To manage the purchase of food and food related products
- To manage profit margins and cost control, ensuring minimum wastage
- To manage the ongoing development of menus
- To maintain all equipment within the catering operation through due care and diligence, reporting faults where they occur
- To train and develop more junior members of the team when required
- To understand and have a working knowledge of all current Health and Safety legislation and Food Hygiene legislation and to be conversant with the rules contained therein
- To ensure all necessary paperwork is completed for effective management of the kitchen
- The post holder will carry out any other duties as appropriate to the post and as requested by the Director of Operations

Person Specification
Essential
- A proven working knowledge of managing a kitchen service
- A flair and enthusiasm for cooking with fresh quality ingredients
- Ability to cope under pressure, in a calm and efficient manner to set deadlines
- Previous experience demonstrating good management and effective co-ordination of a small kitchen team
- Good interpersonal skills with both kitchen, bar, Café/Bistro and events staff and management
- A positive approach to menu planning and development of the catering service
- Level 4 food hygiene certificate
- Stock taking experience
- Menu costing experience
Desirable
- NVQ Qualification 1, 2, 3 or equivalent
- Experience in catering in a busy, commercial kitchen
- Previous kitchen budget control experience
- Training staff in group sessions or on a 121 basis
